The Behind the Scenes tour starts at 10.30am. Please meet at the cellar door
where you will be welcomed by your tour guide.
The group will first visit the historic Wallcliffe Vineyard established in
1970. (Please wear flat closed-in shoes)You will be guided through Cape
Mentelle's viticultural practices and the influences on wine styles and
quality.
Learn historical reasons for the siting of the vineyard and beginnings of
Margaret River as a wine growing region.
Understand the life cycle of the vine as you walk through the 53 year old
Wallcliffe vineyard.
After wondering through the original Wallcliffe vineyard, the host will guide
you to the winery. The visit in the winery shows guests where all the magic
happens to making wine.
A detailed explanation how our wine is made includes the process of
crushing/destemming, fermentation, maceration, pressing and barrel ageing. You
will also learn the different techniques required for making white wine and
red wines, while you view both the red and white cellars.
Step in to the Barrel hall where you get a feel of the chill of oak barrels
aging Cape Mentelle wines.
Ending the Behind The Scenes tour, the food & wine pairing, will take place in
the original vat cellar. This tutored tasting consists of 6 canapés matched
with 6 current release wines. The host will discuss the principles of food and
wine pairing as we work through each dish and selected wine. The focus is on
the wines and samples of foods to pair them with.

In the case of bad weather we will proceed with the tour but may reduce time spent in the vineyard.
Flat closed-in shoes are required.
