The PLAYT Hairy Crab-Themed Buffet Dinner - "October Encounter"
As autumn ushers in the season of succulent crabs, Chef Matt Chan of Park Lane
Hotel brings his renowned creativity and Cantonese culinary expertise to
showcase Jiangsu hairy crabs in a one-of-a-kind gastronomic feast.
This special hairy crab-themed buffet includes two steamed hairy crabs
(approximately 150g each). Guests can enjoy a limitless selection of crab
dishes prepped in diverse ways: Crab Fish Belly Stew, Fish Maw Soup with Hairy
Crab, Udon with Crab and Seafood, Stir-fried Scallops with Crab Roe and Fresh
Milk, Stir-fried Rice Noodles with Crab Roe. The buffet features a wide array
of international delights, including freshly shucked oysters, lobster, snow
crab legs, and Spanish roasted crispy suckling pig.

2. Christmas Dinner Buffet
To elevate the joyous atmosphere, PLAYT presents three carefully prepared
dishes from the live station. Classic Tournedos Rossini with Black Truffle
marries the rich, buttery flavour of duck liver with the juicy tenderness of
beef tenderloin, all enhanced by the enticing aroma of black truffle. Sushi
Hand Roll or Sushi Wrap with Sea Urchin, Negitoro or Salmon Roe and Seared
Wagyu Beef Sushi make each bite a delectable surprise with their distinctive
flavours. Rich & Creamy Crab Bisque served with Hairy Crab Roe Toast showcases
the sweetness and brininess of crab in two delightful forms, offering a
velvety soup and a crunchy toast for a delicious contrast.
No festive feast is complete without the quintessential Christmas classics,
Slow-Roasted Christmas Turkey and Honey-glazed Gammon Ham with Honey Gravy.
The turkey, expertly marinated and roasted to perfection, is moist and
succulent with all the flavourful trimmings, such as giblet gravy, glazed
chestnuts, traditional stuffing, bacon-wrapped sausage and cranberry sauce.
The caramelised exterior of the honey-glazed ham beautifully complements the
smoky notes – absolutely irresistible.
Other palatable hot dishes include US Angus Grain Fed Beef OP Rib, Spanish
Suckling Pig, Salmon En Crout, Oyster Mornay, and Chicken Fricassee with
Morel.
For desserts, Sea Salt Raclette Cheese Gelato is sure to impress with its
unique sweet and salty balance. The fragrant Baked Durian Cheese Tart and the
beloved Belgian Chocolate Mango Cake also provide a perfect sweet finale to
the festive celebration.
