The tour REQUIRES A CAR (it is not available on public transportation) If you don't have a rental car or private driver available, please contact me to arrange for a private driver to be with you at an extra charge to be agreed before hands We will meet up in the morning on the beautiful Modena's hills to see first-hand all the different steps of production of one of the world most famous and tasty cheeses, PARMIGIANO REGGIANO DOP. We'll learn together how it's made, how different ages differ form one another, how to tell an authentic Parmigiano Reggiano apart form copies and, most important, what does DOP (protected denomination of origin) means. After visiting the cheese factory (and tasting their amazing cheese!), we will drive to an acetaia (Balsamic Vinegar house) where, surrounded by vineyards and cherry trees, we will learn the secrets of producing thie precious "black gold" of Modena. After visiting the acetaia, we will try different ages of Balsamic Vinegar and match it with some seasonal products for a very special snack. The itinerary is set in the countryside and does not include visiting Bologna, Modena or other nearby towns.
