Matsuda Seiko Don

The restaurant's most popular dish! Selling over 7,000 bowls in just two months, it's a favorite with many repeat customers. Limited to 200 servings per day, available only for two months during crab season, from November 7 to January 8. This special dish features two whole female snow crabs (Seiko crabs), carefully prepared with meat, roe, and eggs cooked in crab shells to concentrate the flavor. It's then elegantly served atop rice, creating a truly savory experience.

Enjoy a selection of three types of sashimi handpicked by a master of ikejime (a traditional fish preparation technique), along with Akamoku Tororo (a seaweed delicacy), soup, and pickles.


Experience soba-making at a long-established noodle maker's shop.


Locally grown buckwheat from Echizen City and their expansive farm in Hokkaido is used to create their signature soba. They handle everything from milling the flour, making the noodles, and preparing the dipping sauce. Visitors can tour this rare soba factory, and enjoy a tasting of the famous Fukui Oroshi Soba.

Soba-making Experience

This popular local food experience attracts 15,000 participants annually. With the staff’s careful guidance, including demonstrations on monitors, first-timers and even children can join with confidence.
Note: The soba-making experience is for pairs (1 batch = 2 servings). Each participant takes home one serving as a souvenir.

Exquisite Sake from a Renowned Rice-Growing Region

Fukui Prefecture, known as the birthplace of Koshihikari rice, is celebrated as one of Japan’s top rice-producing regions. The sake made here uses premium sake rice, and the area benefits from pristine snowmelt water from the mountains, including the famous Mt. Hakusan.

Born: A pure sake with no additives

Maruoka Castle Projection Mapping Night "Hikari Musubi"

A Fusion of Tradition and Technology at Maruoka Castle

Experience the unique blend of Hokuriku's only surviving castle keep and cutting-edge projection mapping technology. The show begins with a countdown featuring illustrations of historical warriors connected to Maruoka Castle. The main projection, which changes with the seasons, includes three themes: "Legend," "Future Creation," and "Prayer for Peace," each bringing the castle to life with vibrant colors in a mesmerizing display.
Additionally, in the park located west of the castle, enjoy interactive light displays that move in sync with visitors' movements.

Please be punctual and arrive at the designated meeting place on time. The bus will depart on time and will not wait for latecomers.
Latecomers who wish to rejoin the group will be responsible for all transportation fees.
