The concept is 'the combination of ingredients and materials'. Dishes are made up of ingredients that go well together, such as autumn swordfish and tomatoes, potatoes and cheese, duck and figs. The signature dish is 'caviar, squid and vegetables'. The contrasting effect of salty and sweet flavours creates a creative taste. The restaurant minimises the number of ingredients in each dish, and strives to create dishes that leave a lasting impression of what you have eaten.
